Recipe Notes

Tips for How to Keep Homemade Tortillas Soft

  • This recipe calls for using a stand mixer, but you can also make it by hand. Just mix the dough in a medium bowl with a spoon or spatula. Then place the dough onto a slightly floured cutting board. Then knead the dough until it become nice and smooth (it take about 2 to 3 minutes) then continue as directed in step 3 below.
  • Roll the tortillas until they're thin enough. You want the tortilla to look almost translucent if you lift it to light. Because thick tortillas won't be tender.
  • When you try to roll the tortilla and the dough keeps shrinking back, leave it for another 15-30 minutes. The gluten just doesn't have enough time to be left.
  • I also try to use olive oil for this tortilla recipe, and it have a good results. If you use coconut oil or peanuts oil, the tortillas will take a little taste of oil.
  • If your tortilla feels stiff after cooked, it means that you have cooked it too long or the heat is too high. Cook the tortillas long enough only to get some good bubbles on the surface and some light brown spots at the bottom. Then flip the tortillas for another 15-20 seconds.
  • Tortilla warmer is a good accessory when making tortillas, because you can stack tortillas after cooking to make them keep soft. It is also perfect for serving tortillas at the table. But it is not necessary to have one, because you can also use a pot with a lid that is slightly larger than a tortilla. Place each tortilla in the pot after removing it from the pan and cover with the lid. The steam from freshly cooked tortillas will make them all soft and supple. That is the same way like the tortilla warmer works!
  • Some readers have ask whether it is necessary to have a tortilla press. Honestly, I think it is not necessary for these kind of tortilla, because they are already quite easy to roll out.
  • Clean the pan between the tortillas with a wet paper towel if the flour starts to accumulate.
