  • 1/4 cup of grated parmesan
  • 1/4 cup of chopped parsley
  • 1/2 pound of chopped mozzarella
  • 1 tablespoon of onion salt
  • 1 cup of fine dry bread crumbs
  • About 2 1/2 cups of olive oil
  • 3 large eggs
  • 6 medium baking potatoes (about 2 1/2 pound) , peeled and cut into pieces

  1. Cover the potatoes with salty cold water (2 teaspoons for 4 pieces) in a large pot, then simmer until soft, it take about 15 minutes. Drain the potatoes and chill in a large bowl until cool, it take about 45 minutes.
  2. Mash the potatoes, then stir the cheese, the onion salt, parsley, 1/2 teaspoon pepper, and salt to taste. And stir 1 egg.
  3. Form the potato mixture into 24 oval croquettes (each less than 1/4 cup). Gently shake the remaining 2 eggs in a shallow bowl and put the breadcrumbs into another shallow bowl. Dip 1 croquette into the egg, let the excess drip off, then roll the bread crumbs to coat. And then transfer to paper-coated baking sheet. Repeat with the remaining croquettes.
  4. Heat 1/2 inch of olive oil in a skillet weighing 12 inches above medium-high fire until it shimmers. Fried croquettes in batches, turn it occasionally, until it turns to golden brown, sometimes it take 4 to 5 minutes per batch. Transfer to paper towel to dry. And finally the croquettes are ready to serve.
