Tortilla Espanola Ingredients

  • ⅓ cup of vegetable oil
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1 cup of warm water
  • 3 cups of multipurpose flour

  1. Mix flour, salt and baking powder in the bowl with stand mixer. Using the dough hook, mix the dry ingredients until well mixed.
  2. Add oil and water with the medium speed of running mixer. After 1 minute, or when the mixture merges and begins to looks like a ball, reduce the mixing speed to low. And then keep stirring for 1 minute or until the dough is smooth.
  3. After the dough is smooth enough, move it to the cutting board that was filled with flour. Cut it into 16 equal pieces. Turn each piece to coat it with flour. Turn each piece into a ball and flatten it with the palm of your hand. Cover the flattened ball with a clean kitchen towel and leave it for at least 15 minutes (maximal 2 hours) before continuing to the next step.
  4. After the break, heat a large pan over medium heat. Roll each piece of dough into a rough circle, with diameter about 6-7 inches. And keep the cutting board and rolling pin with a little floured. Don't stack raw tortillas on top of each other or they will get wet.

  • I also try to use olive oil for this tortilla recipe, and it have a good results. If you use coconut oil or peanuts oil, the tortillas will take a little taste of oil.
  • If your tortilla feels stiff after cooked, it means that you have cooked it too long or the heat is too high. Cook the tortillas long enough only to get some good bubbles on the surface and some light brown spots at the bottom. Then flip the tortillas for another 15-20 seconds.
  • Tortilla warmer is a good accessory when making tortillas, because you can stack tortillas after cooking to make them keep soft. It is also perfect for serving tortillas at the table. But it is not necessary to have one, because you can also use a pot with a lid that is slightly larger than a tortilla. Place each tortilla in the pot after removing it from the pan and cover with the lid. The steam from freshly cooked tortillas will make them all soft and supple.
